Nutrition and You: Functional Foods

In this online, self-paced course, students will learn will learn what functional foods to eat for increased performance in sports, training, and daily life. Subjects include what garlic, tomato sauce, and tofu have in common and which spices and herbs need to be consumed in your daily diet as well as about the health benefits of cocoa for cardiovascular health! Five-week Course Outline: I. Defining Functional Foods and Written Project Details; II. Spice Up Your Diet and Quiz 1 Due; III. General Guidelines and Foods and Written Project Topic choice/References due; IV. Diet Diversity and Functional Food Protection and Outline Due; V. Choosing Foods and Written Project and Final Exam Due Objectives: 1) Students will understand why some functional foods should be included in the diet; 2) Students will be able to name the many health benefits of specific functional foods; 3) Students will be able to translate the health benefits of specific functional foods into practical application for the general American diet; 4) Students will understand how antioxidants work and be able to communicate this knowledge effectively to the general public; 5) Students will be able to state in their own words what the free radical theory means; 6) Students will understand how to use these foods, phytochemicals and flavonoids to protect their DNA; 7) Students will be able to state which foods can potentially lower the risk of specific diseases such as cancer, heart disease, or osteoporosis; 8) Students will be able to state which foods can potentially improve a specific disease state; 9) Students will learn which foods may offer a health benefit but may also increase other disease risk factors; 10) Students will be able to understand the value of evaluating one's diet for color diversity and phytonutrient content.
