Zach Hartlyn is the Chef of the Metabolic Kitchen at the University of Utah. He holds a degree in Culinary Arts from Johnson and Wales University in Rhode Island and a degree in Sustainable Agriculture from Sterling College in Vermont. He has been working in food and agricultural production for over 20 years. In addition to his duties in the metabolic kitchen planning menus, testing recipes, and cooking for nutrition and health research; he co-owns and co-operates, BUG Farms, a small market garden on the westside of Salt Lake City, works as a caterer and a consultant with other small food businesses. Outside of work, his interests include food preservation, history, and soil health.
